- 3 boneless, skinless chicken breasts (approx. 1 lb)
- 1 cup BBQ sauce
- 2 cups fresh coleslaw mix
- 4 soft flour tortillas
- Optional: sliced jalapeños or avocado for topping
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
- Grill or sauté chicken for 6-7 minutes per side until golden brown and cooked through (internal temp of 165°F).
- Let chicken rest for a few minutes before shredding with two forks.
- In a bowl, mix shredded chicken with BBQ sauce until well-coated.
- Lay out a tortilla, add BBQ chicken mixture and coleslaw on one side.
- Fold sides of the tortilla in and roll tightly from one end to another. Cut in half if desired.
