- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz rotini or penne pasta
- 1 cup BBQ sauce (store-bought or homemade)
- 1 cup fresh bell peppers, diced
- ½ cup red onion, diced
- 1 cup sharp cheddar cheese, grated
- ½ cup ranch dressing
- ¼ cup fresh cilantro or parsley, chopped
Instructions
- Preheat the grill or stovetop skillet over medium heat. Season chicken with salt and pepper. Grill for 6-7 minutes per side until fully cooked.
- Boil salted water in a large pot. Cook pasta according to package instructions until al dente. Drain and rinse with cold water.
- In a bowl, mix BBQ sauce and ranch dressing until smooth.
- In a large bowl, combine pasta, grilled chicken (chopped), diced veggies, cheese, and herbs. Drizzle with BBQ-ranch sauce and toss gently to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
