  • 8 corn tortillas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream
  • 2 tsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent (about 4 minutes).
  2. Add ground beef and cook until browned, breaking it apart with a spatula (5-7 minutes).
  3. Stir in minced garlic, salt, and pepper; cook for one more minute.
  4. Pour in half the enchilada sauce; simmer for 3-4 minutes.
  5. Spread some enchilada sauce in a baking dish. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
  6. Pour remaining sauce over rolled tortillas and sprinkle cheese on top. Bake at 350°F (175°C) for 20-25 minutes until bubbly.
