- 1 lb lean ground beef
- 8 corn tortillas
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- ½ cup sour cream
- 2 tsp olive oil
- Fresh cilantro (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion until translucent (about 4 minutes).
- Add ground beef and cook until browned, breaking it apart with a spatula (5-7 minutes).
- Stir in minced garlic, salt, and pepper; cook for one more minute.
- Pour in half the enchilada sauce; simmer for 3-4 minutes.
- Spread some enchilada sauce in a baking dish. Fill each tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining sauce over rolled tortillas and sprinkle cheese on top. Bake at 350°F (175°C) for 20-25 minutes until bubbly.
