  • 8 flour tortillas
  • 2 cups red enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup sour cream (for topping)
  • 1/4 cup chopped cilantro (for garnish)
  • 1/2 cup diced onions
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. In a skillet over medium heat, brown ground beef with diced onions until no longer pink. Drain excess fat.
  2. Add cumin, chili powder, and half of the red enchilada sauce. Stir well and heat through.
  3. Lay out each tortilla, fill with beef mixture, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour remaining enchilada sauce over rolled tortillas and sprinkle with cheese.
