- 1 lb lean ground beef
- 8 flour tortillas
- 2 cups red enchilada sauce (store-bought or homemade)
- 2 cups shredded cheddar and Monterey Jack cheese
- 1 cup sour cream (for topping)
- 1/4 cup chopped cilantro (for garnish)
- 1/2 cup diced onions
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- In a skillet over medium heat, brown ground beef with diced onions until no longer pink. Drain excess fat.
- Add cumin, chili powder, and half of the red enchilada sauce. Stir well and heat through.
- Lay out each tortilla, fill with beef mixture, roll tightly, and place seam-side down in a greased baking dish.
- Pour remaining enchilada sauce over rolled tortillas and sprinkle with cheese.
- Bake in a preheated oven at 350°F for 20-25 minutes until bubbly and golden brown.
- Serve warm topped with sour cream and cilantro.
