- 3 lbs beef chuck roast
- 2 medium sweet onions, sliced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 4 crusty bread rolls
- 8 oz provolone or mozzarella cheese, sliced
- Your favorite BBQ or horseradish sauce
Instructions
- Trim excess fat from the beef chuck roast and season generously with salt and pepper.
- In a large skillet over medium-high heat, sear the beef on all sides for about 4 minutes each until browned.
- Add sliced onions and minced garlic around the meat; cook until onions are translucent.
- Pour in beef broth to cover half of the meat and simmer on low heat for 3-4 hours until fork-tender.
- Shred the beef using two forks and return some cooking liquid to keep it moist.
- Layer shredded beef onto crusty rolls, top with cheese, and drizzle with sauce. Broil until bubbly.
