  • 1 medium yellow onion, sliced
  • 8 oz fresh mushrooms (button or cremini), sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 8 oz egg noodles
  • 2 tbsp all-purpose flour
  • 1 tsp smoked paprika
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear the beef sirloin until browned on all sides (4-5 minutes). Remove from skillet and set aside.
  2. In the same skillet, sauté sliced onions for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Stir in sliced mushrooms and cook until golden brown (about 5 minutes).
  4. Sprinkle flour over the mixture, stirring to combine. Gradually add beef broth while stirring continuously until smooth. Simmer gently until thickened.
  5. Remove from heat and stir in sour cream and smoked paprika until creamy.
  6. Serve over cooked egg noodles or mashed potatoes.
