- 1 lb beef sirloin, cut into bite-sized pieces
- 1 medium yellow onion, sliced
- 8 oz fresh mushrooms (button or cremini), sliced
- 3 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup full-fat sour cream
- 8 oz egg noodles
- 2 tbsp all-purpose flour
- 1 tsp smoked paprika
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef sirloin until browned on all sides (4-5 minutes). Remove from skillet and set aside.
- In the same skillet, sauté sliced onions for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
- Stir in sliced mushrooms and cook until golden brown (about 5 minutes).
- Sprinkle flour over the mixture, stirring to combine. Gradually add beef broth while stirring continuously until smooth. Simmer gently until thickened.
- Remove from heat and stir in sour cream and smoked paprika until creamy.
- Serve over cooked egg noodles or mashed potatoes.
