Ingredients

- 2 black cod fillets (6 oz each)
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp mirin
- 1 tsp freshly grated ginger
- 2 cloves garlic, minced
- For garnish: 1 tbsp toasted sesame seeds, 2 scallions (chopped)
Instructions
- Prepare the marinade by mixing soy sauce, brown sugar, mirin, ginger, and garlic until the sugar dissolves.
- Place the black cod fillets in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes.
- Preheat your oven to 400°F (200°C) or prepare your grill for direct heat.
- For baking: Place fillets on a lined baking sheet and bake for 15-20 minutes or until flaky. For grilling: Cook each side for 4-5 minutes until charred.
- Garnish with toasted sesame seeds and chopped scallions before serving.
