Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups fresh blackberries
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs, room temperature
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  2. Bake crust for 10 minutes until golden; let cool.
  3. In a bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla, lemon juice, and eggs one at a time, mixing well.
  4. Gently fold in half of the blackberries into the filling mixture.
  5. Pour filling over cooled crust and top with remaining blackberries. Bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Cool completely before refrigerating for at least four hours or overnight.
