- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups fresh blackberries
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs, room temperature
- 2 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
- Bake crust for 10 minutes until golden; let cool.
- In a bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla, lemon juice, and eggs one at a time, mixing well.
- Gently fold in half of the blackberries into the filling mixture.
- Pour filling over cooled crust and top with remaining blackberries. Bake for 50-60 minutes until set but slightly jiggly in the center.
- Cool completely before refrigerating for at least four hours or overnight.
