- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 2 cups fresh blueberries
- 2 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a bowl. Press firmly into the bottom of a greased springform pan.
- In a separate bowl, beat cream cheese until smooth. Gradually add sugar, mixing until fluffy. Incorporate sour cream, vanilla extract, and eggs one at a time.
- Gently fold in blueberries and pour the mixture over the crust.
- Bake for 50-60 minutes until slightly jiggly in the center.
- Turn off the oven and let the cheesecake cool inside for an hour before refrigerating for at least four hours or overnight.
- Slice and serve chilled or at room temperature.
