  • 1/2 cup whole milk
  • 2 large eggs

  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together tapioca flour and salt.
  3. In a saucepan, heat milk and olive oil until warm but not boiling.
  4. Pour the warm mixture over the flour mixture; add eggs one at a time while stirring until combined.
  5. Gently fold in the grated cheese.
  6. Scoop mounds of batter onto the prepared baking sheet.
  7. Bake for 15-20 minutes until puffed and golden brown.
