- 1 cup tapioca flour
- 1/2 cup whole milk
- 2 large eggs
- 1 cup grated cheese (mozzarella or parmesan)
- 1/2 tsp salt
- 1 tsp baking powder
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together tapioca flour and salt.
- In a saucepan, heat milk and olive oil until warm but not boiling.
- Pour the warm mixture over the flour mixture; add eggs one at a time while stirring until combined.
- Gently fold in the grated cheese.
- Scoop mounds of batter onto the prepared baking sheet.
- Bake for 15-20 minutes until puffed and golden brown.
