Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the softened butter and brown sugar until light and fluffy (3-4 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add flour, baking powder, cinnamon, and a pinch of salt; stir until just combined.
- Scoop tablespoon-sized portions onto the prepared baking sheet, flatten slightly.
- Place a teaspoon of your chosen filling on half of the cookie discs; top with another disc and seal edges gently.
- Bake for 12-15 minutes until golden on edges but soft in center; let cool before serving.
