- 1 large baguette or ciabatta bread
- 4 ripe tomatoes, diced
- 1 cup fresh basil leaves, chopped
- 3 garlic cloves, minced
- ¼ cup extra virgin olive oil
- 2 tbsp balsamic vinegar (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Slice the baguette or ciabatta into 1-inch thick pieces.
- Brush the bread slices lightly with olive oil and toast in the oven until golden brown, about 8-10 minutes.
- In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, and olive oil. Season with salt and pepper.
- Once toasted, spoon the tomato mixture generously onto each slice of bread.
- Drizzle with balsamic vinegar if desired and serve immediately.
