- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 1/2 cup buffalo sauce (store-bought or homemade)
- 4 cups fresh greens (mixed romaine and spinach)
- 1 cup cherry tomatoes (halved)
- 1/2 cup celery sticks (diced)
- 1/2 cup blue cheese crumbles (optional)
- 1/4 cup ranch dressing
Instructions
- Preheat your grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes per side until golden brown and cooked through.
- Remove chicken from heat and toss in buffalo sauce until fully coated. Let rest while preparing the salad.
- In a large bowl, combine fresh greens, cherry tomatoes, and diced celery. Toss gently.
- Slice rested chicken into strips or bite-sized pieces and add to the salad bowl.
- Top with blue cheese crumbles if desired, drizzle ranch dressing over everything, and toss lightly to combine flavors.
- Serve immediately in bowls or plates.
