- 8 oz spaghetti
- 1 cup freshly grated Pecorino Romano cheese
- 2 tsp freshly ground black pepper
- Salt (for pasta water)
Instructions
- Boil water in a large pot and add salt. Cook spaghetti until al dente according to package instructions.
- While pasta cooks, grate the Pecorino Romano cheese and place it in a bowl. Generously sprinkle fresh black pepper over the cheese.
- Reserve about 1 cup of pasta water before draining spaghetti.
- In a large mixing bowl, combine hot pasta with cheese and pepper mixture, gradually adding reserved pasta water until creamy.
- Toss vigorously to ensure all strands are well coated and serve immediately with extra cheese and pepper on top.
