Ingredients

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente (8-10 minutes), reserving some pasta water before draining.
  2. In a skillet over medium heat, cook pancetta until crispy and golden brown.
  3. In a bowl, whisk eggs and Parmesan cheese together; add black pepper.
  4. Combine drained pasta with pancetta in the skillet. Quickly mix in the egg mixture while tossing continuously.
  5. If necessary, add reserved pasta water gradually until reaching a creamy consistency.
  6. Serve immediately, garnished with extra Parmesan and black pepper.
