- 400g spaghetti
- 150g diced pancetta
- 4 large eggs
- 100g grated Parmesan cheese
- 1 tsp freshly cracked black pepper
- Salt (for boiling water)
Instructions
- Bring a large pot of salted water to a boil. Cook spaghetti until al dente (8-10 minutes), reserving some pasta water before draining.
- In a skillet over medium heat, cook pancetta until crispy and golden brown.
- In a bowl, whisk eggs and Parmesan cheese together; add black pepper.
- Combine drained pasta with pancetta in the skillet. Quickly mix in the egg mixture while tossing continuously.
- If necessary, add reserved pasta water gradually until reaching a creamy consistency.
- Serve immediately, garnished with extra Parmesan and black pepper.
