Instructions

- 2. Sauté Pancetta: In a skillet over medium heat, cook diced pancetta until crispy (5-7 minutes).
- 3. Mix Eggs and Cheese: In a bowl, whisk together eggs and Parmesan until smooth.
- 4. Combine Everything: Quickly add hot spaghetti to the skillet with pancetta; remove from heat immediately.
- 5. Create Your Sauce: Pour the egg mixture onto the hot pasta while tossing quickly to prevent scrambling. Gradually add reserved pasta water until desired creaminess is achieved.
- 6. Add Seasoning: Season generously with black pepper and additional Parmesan if desired.
