- 3/4 cup brown sugar, packed
- 2 large eggs, at room temperature
- 2 cups grated carrots (freshly grated)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, cream the softened butter with both sugars until fluffy (about 3 minutes).
- Beat in eggs one at a time, then mix in the dry ingredients until just combined.
- Fold in grated carrots and optional nuts/raisins until evenly distributed.
- Drop tablespoon-sized dough onto prepared sheets about 2 inches apart.
- Bake for 12-15 minutes or until edges are golden brown.
