  • 2 cups grated carrots (freshly grated)

  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, cream the softened butter with both sugars until fluffy (about 3 minutes).
  4. Beat in eggs one at a time, then mix in the dry ingredients until just combined.
  5. Fold in grated carrots and optional nuts/raisins until evenly distributed.
  6. Drop tablespoon-sized dough onto prepared sheets about 2 inches apart.
  7. Bake for 12-15 minutes or until edges are golden brown.
