- 500g fresh carrots, grated
- 4 cups full-fat milk
- 3/4 cup sugar (or to taste)
- 3 tablespoons ghee
- 1/2 cup cashews, chopped
- 1/2 cup almonds, chopped
- 1/4 cup raisins
- 1/2 teaspoon cardamom powder
Instructions
- Wash, peel, and finely grate the fresh carrots.
- In a heavy-bottomed pan, heat ghee over medium heat. Add the grated carrots and sauté for about 10 minutes until fragrant.
- Pour in the full-fat milk and bring to a gentle boil. Let it simmer for around 30 minutes until thickened.
- Stir in sugar and cardamom powder, mixing until combined.
- Incorporate chopped cashews, almonds, and raisins. Cook for an additional 10 minutes until gooey.
- Serve warm or chilled for a delightful treat.
