  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 1/2 cup sour cream (or Greek yogurt)
  • Optional toppings: fresh fruit or chocolate sauce

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into the bottom of each liner.
  3. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  4. Pour the filling over the crusts until each cup is about three-quarters full.
  5. Bake for 20-25 minutes or until slightly jiggly in the center. Cool completely in the tin before transferring to a wire rack.
  6. Top with your choice of fresh fruit, whipped cream, or chocolate sauce.
