- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 1/2 cup sour cream (or Greek yogurt)
- Optional toppings: fresh fruit or chocolate sauce
Instructions
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
- In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into the bottom of each liner.
- Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
- Pour the filling over the crusts until each cup is about three-quarters full.
- Bake for 20-25 minutes or until slightly jiggly in the center. Cool completely in the tin before transferring to a wire rack.
- Top with your choice of fresh fruit, whipped cream, or chocolate sauce.
