- 1 ¾ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp pure vanilla extract
- ½ cup sour cream
- 3 large eggs, room temperature
Instructions
- Preheat oven to 325°F (165°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- Beat softened cream cheese with an electric mixer until smooth and fluffy.
- Gradually add sugar, then mix in eggs one at a time, scraping down the sides.
- Fold in sour cream and vanilla until fully blended.
- Pour batter over crust and bake for 50–60 minutes until slightly jiggly in the center.
- Cool completely before refrigerating for several hours or overnight.
