Instructions
- Cook the tortellini: Boil salted water and cook tortellini according to package instructions (about 3-5 minutes) until they float.
- Brown the beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks.
- Add enchilada sauce: Pour in the enchilada sauce and let simmer for about 5 minutes to meld flavors.
- Combine: Gently fold in the cooked tortellini and sprinkle both cheeses over the top. Stir until everything is coated in cheesy goodness.
