  • 2 lbs Russet potatoes, peeled and sliced into 1/4-inch rounds
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup sour cream (full-fat)
  • 1/2 cup butter, melted
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a large baking dish with cooking spray or butter.
  2. Layer half the potato slices at the bottom of the dish. In a bowl, mix together cheddar cheese, sour cream, garlic powder, onion powder, salt, pepper, and half of the melted butter.
  3. Spread half of the cheese mixture over the potatoes; repeat layers with remaining potatoes and cheese mixture.
  4. Drizzle remaining melted butter on top. Cover tightly with aluminum foil and bake for 45 minutes.
  5. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown. Let cool slightly before serving.
