  • 8 oz penne or rotini pasta
  • 1 lb lean ground beef or turkey
  • 1 packet (1 oz) taco seasoning
  • 4 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup diced bell peppers
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Fresh cilantro (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions and bell peppers until softened, about 5 minutes.
  3. Push veggies to the side and add ground meat; cook until browned. Drain excess fat if necessary.
  4. Stir in taco seasoning and minced garlic, mixing well.
  5. Reduce heat slightly and add cream cheese and diced tomatoes; stir until creamy.
  6. Fold in the cooked pasta until well coated, then top with shredded cheese. Cover briefly on low heat until melted.
