- 8 oz penne or rotini pasta
- 1 lb lean ground beef or turkey
- 1 packet (1 oz) taco seasoning
- 4 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 cup diced bell peppers
- 1 medium onion, diced
- 3 cloves garlic, minced
- Fresh cilantro (optional)
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté onions and bell peppers until softened, about 5 minutes.
- Push veggies to the side and add ground meat; cook until browned. Drain excess fat if necessary.
- Stir in taco seasoning and minced garlic, mixing well.
- Reduce heat slightly and add cream cheese and diced tomatoes; stir until creamy.
- Fold in the cooked pasta until well coated, then top with shredded cheese. Cover briefly on low heat until melted.
