Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream softened butter with granulated and brown sugars until light and fluffy.
- Add pumpkin puree, maple syrup, egg, and vanilla extract; mix until smooth.
- Gradually fold in dry ingredients until just combined—do not overmix.
- Drop tablespoon-sized scoops of dough onto prepared sheets, spaced two inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft. Let cool slightly before transferring to wire racks.
