- 1 tsp fresh thyme (or ½ tsp dried thyme)
- 2 tbsp low-sodium soy sauce
- Salt and pepper to taste
Instructions
- Prep the ingredients: Assemble all items on your counter.
- Sauté onions and garlic: Heat olive oil in a large skillet over medium heat. Add chopped onions and minced garlic; cook until fragrant and translucent.
- Add chicken: Season chicken breasts with salt and pepper. Place them in the skillet and sear for about 5 minutes per side until golden brown.
- Incorporate mushrooms: Add sliced mushrooms and thyme, cooking for an additional 3-4 minutes until mushrooms soften.
- Simmer: Pour in chicken broth and soy sauce; scrape any browned bits from the skillet. Let simmer for about 10 minutes until the chicken is fully cooked.
- Serve: Plate the chicken and mushroom mixture over rice or pasta. Garnish with extra thyme if desired.
