- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes.
- In a large bowl, toss the halved potatoes with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
- Season the chicken breasts with olive oil, lemon juice, salt, and pepper.
- Arrange the seasoned potatoes on one side of a baking dish and place the chicken breasts among them.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
- Allow to rest for a few minutes before serving hot.
