  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
  3. Season the chicken breasts with olive oil, lemon juice, salt, and pepper.
  4. Arrange the seasoned potatoes on one side of a baking dish and place the chicken breasts among them.
  5. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
