Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a large baking dish with nonstick cooking spray.
  3. In a bowl, mix uncooked rice, cream of chicken soup, chicken broth, mixed vegetables, onion powder, salt, and pepper until well combined.
  4. Place seasoned chicken breasts on top of the rice mixture.

  6. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
