- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- Spray a large baking dish with nonstick cooking spray.
- In a bowl, mix uncooked rice, cream of chicken soup, chicken broth, mixed vegetables, onion powder, salt, and pepper until well combined.
- Place seasoned chicken breasts on top of the rice mixture.
- Cover with aluminum foil and bake for 1 hour or until the rice is tender.
- Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
