- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 cups romaine lettuce, chopped
- 1 cup fresh grated parmesan cheese
- 1 cup croutons
- ½ cup Caesar dressing
- 2 tbsp fresh lemon juice
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Cook for 6-7 minutes per side until golden and cooked through. Let cool before dicing.
- In a large bowl, toss chopped romaine lettuce with diced chicken.
- Add croutons and grated parmesan cheese.
- Drizzle Caesar dressing and lemon juice over the salad. Toss gently to combine.
- Serve immediately on plates or family-style in a bowl.
