- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 9 no-boil lasagna noodles
- 15 oz ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach (or other greens)
- 2 cups marinara sauce (store-bought or homemade)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil.
- In a skillet over medium heat, sauté diced chicken in olive oil until golden brown and cooked through, about 7-10 minutes.
- Add spinach along with garlic powder and Italian seasoning to the skillet, cooking until wilted, about 2-3 minutes.
- In a bowl, mix ricotta cheese with half of the mozzarella and Parmesan cheeses until combined.
- Layer the ingredients starting with marinara sauce at the bottom of the dish—follow with noodles, cheese mixture, sautéed chicken and spinach, then more sauce. Repeat until all ingredients are used.
- Cover with foil and bake for 25 minutes; remove foil for the last 15 minutes for a golden crust. Let cool before serving.
