  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 9 no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (or other greens)
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil.
  2. In a skillet over medium heat, sauté diced chicken in olive oil until golden brown and cooked through, about 7-10 minutes.
  3. Add spinach along with garlic powder and Italian seasoning to the skillet, cooking until wilted, about 2-3 minutes.
  4. In a bowl, mix ricotta cheese with half of the mozzarella and Parmesan cheeses until combined.
  5. Layer the ingredients starting with marinara sauce at the bottom of the dish—follow with noodles, cheese mixture, sautéed chicken and spinach, then more sauce. Repeat until all ingredients are used.
  6. Cover with foil and bake for 25 minutes; remove foil for the last 15 minutes for a golden crust. Let cool before serving.
