  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 9 no-boil lasagna noodles
  • 2 cups fresh spinach (optional)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add chopped chicken and cook until no longer pink.
  3. If using spinach, add it to the skillet until wilted, then stir in marinara sauce and simmer for 5 minutes.
  4. In a baking dish, layer marinara sauce on the bottom, followed by noodles, half of the chicken mixture, and dollops of ricotta. Repeat layers and finish with mozzarella on top.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden brown.
