Ingredients

  • 34 boneless, skinless chicken breasts (1 lb total)
  • 3 cloves garlic, minced
  • 15 oz whole-milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 9 oven-ready lasagna noodles
  • 2 cups canned tomato sauce
  • 1 cup fresh or frozen spinach (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Dice chicken and season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat; sauté garlic until fragrant. Add chicken and cook until golden brown.
  3. In a bowl, combine ricotta, half the mozzarella, Parmesan, salt, and pepper until smooth.
  4. In a baking dish, layer tomato sauce, noodles, cheese mixture, and chicken. Repeat layers until all ingredients are used.
  5. Top the last layer with remaining tomato sauce and mozzarella. Cover with foil and bake for 25 minutes.
  6. Remove foil and bake for another 15 minutes until bubbly and golden. Allow to cool before slicing.
