- 3–4 boneless, skinless chicken breasts (1 lb total)
- 3 cloves garlic, minced
- 15 oz whole-milk ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 9 oven-ready lasagna noodles
- 2 cups canned tomato sauce
- 1 cup fresh or frozen spinach (optional)
Instructions
- Preheat oven to 375°F (190°C). Dice chicken and season with salt and pepper.
- In a skillet, heat olive oil over medium heat; sauté garlic until fragrant. Add chicken and cook until golden brown.
- In a bowl, combine ricotta, half the mozzarella, Parmesan, salt, and pepper until smooth.
- In a baking dish, layer tomato sauce, noodles, cheese mixture, and chicken. Repeat layers until all ingredients are used.
- Top the last layer with remaining tomato sauce and mozzarella. Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 15 minutes until bubbly and golden. Allow to cool before slicing.
