- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 8 oz lo mein noodles
- 1 cup bell peppers, sliced (red and green)
- 1 cup carrots, thinly sliced
- 4 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp cornstarch
- 2 tbsp vegetable oil (canola or peanut)
Instructions
- Prepare your ingredients by chopping the chicken and slicing the vegetables.
- Marinate the chicken with soy sauce and cornstarch for about 15 minutes.
- Heat vegetable oil in a large pan over medium-high heat. Sauté minced garlic until fragrant, then add marinated chicken until golden brown.
- Add bell peppers and carrots to the pan; stir-fry until tender.
- Toss in pre-cooked lo mein noodles and mix well to combine.
- Drizzle with soy sauce and sesame oil; stir until everything is evenly coated.
- Garnish with chopped green onions before serving.
