- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 8 oz lo mein noodles
- 1 cup mixed vegetables (carrots, bell peppers, snap peas)
- ¼ cup low-sodium soy sauce
- 1 tbsp sesame oil
- 2 green onions, sliced for garnish
- 1 tsp fresh ginger, grated
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Prep your ingredients: Chop chicken into bite-sized pieces and mince garlic and ginger.
- Heat a large skillet over medium-high heat with oil. Cook chicken until golden brown (5-7 minutes).
- Add mixed vegetables, garlic, and ginger to the skillet; stir-fry for another 3-4 minutes until veggies are tender-crisp.
- Cook lo mein noodles according to package instructions; drain well.
- In a bowl, whisk soy sauce, sesame oil, cornstarch mixture until smooth.
- Add cooked noodles to the skillet with chicken and vegetables; pour sauce mixture over everything. Toss to combine and heat through for another 2-3 minutes.
