- 3–4 boneless, skinless chicken breasts (1.5 lbs)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 2 tsp Italian seasoning
- 2 cups marinara sauce
- 1 cup shredded whole milk mozzarella cheese
- ½ cup freshly grated parmesan cheese
- 2 cloves fresh garlic (minced)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Tenderize chicken breasts by pounding them to about 1 inch thick.
- Create a breading station: one bowl with seasoned flour, another with beaten eggs, and a third with panko mixed with Italian seasoning.
- Dredge each chicken breast in flour, dip in egg wash, then coat with panko breadcrumbs.
- In a skillet over medium heat, add olive oil and sauté the breaded chicken until golden brown (4-5 minutes per side). Transfer to a baking dish.
- Pour marinara sauce over each piece of chicken, then sprinkle with mozzarella and parmesan cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
