  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 tsp Italian seasoning
  • 2 cups marinara sauce
  • 1 cup shredded whole milk mozzarella cheese
  • ½ cup freshly grated parmesan cheese
  • 2 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Tenderize chicken breasts by pounding them to about 1 inch thick.
  3. Create a breading station: one bowl with seasoned flour, another with beaten eggs, and a third with panko mixed with Italian seasoning.
  4. Dredge each chicken breast in flour, dip in egg wash, then coat with panko breadcrumbs.
  5. In a skillet over medium heat, add olive oil and sauté the breaded chicken until golden brown (4-5 minutes per side). Transfer to a baking dish.
  6. Pour marinara sauce over each piece of chicken, then sprinkle with mozzarella and parmesan cheese.
