Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs total)
- 1 cup seasoned breadcrumbs
- ½ cup freshly grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 cups marinara sauce
- 3 tbsp olive oil
- Fresh basil, for garnish
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
- Season both sides of each chicken breast with salt and pepper.
- Set up three bowls: one with ½ cup flour, one with 2 beaten eggs, and one with seasoned breadcrumbs mixed with ½ cup Parmesan cheese.
- Dip each chicken breast into the flour, then the egg wash, followed by the breadcrumb mixture until fully coated.
- Heat about half an inch of olive oil in a large skillet over medium heat. Fry the breaded chicken for about 4-5 minutes on each side until golden brown.
- Transfer the chicken to the prepared baking dish, top with marinara sauce and sprinkle mozzarella cheese generously over each piece.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Garnish with fresh basil before serving.
