- 4 boneless, skinless chicken breasts
- 1 cup flour
- 2 large eggs
- 2 tbsp water
- 1 cup panko breadcrumbs
- ½ cup freshly grated Parmesan cheese
- 1 cup whole milk mozzarella cheese
- 2 cups marinara sauce (homemade or store-bought)
- 1 tsp Italian seasoning
- ¼ cup olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken breasts between plastic wrap and pound to an even thickness.
- Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs mixed with water, and one with panko breadcrumbs combined with Parmesan cheese.
- Dip each chicken breast into the flour, then into the egg wash, and finally coat with the panko mixture.
- In a skillet over medium heat, heat olive oil until shimmering. Fry each breaded chicken breast for about 3-4 minutes per side until golden brown.
- Place fried chicken in a baking dish. Top generously with marinara sauce and mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes until cooked through and cheese is bubbly.
