  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs
  • 2 tbsp water
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 cup whole milk mozzarella cheese
  • 2 cups marinara sauce (homemade or store-bought)
  • 1 tsp Italian seasoning
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place chicken breasts between plastic wrap and pound to an even thickness.
  3. Set up three bowls: one with flour seasoned with salt and pepper, one with beaten eggs mixed with water, and one with panko breadcrumbs combined with Parmesan cheese.
  4. Dip each chicken breast into the flour, then into the egg wash, and finally coat with the panko mixture.
  5. In a skillet over medium heat, heat olive oil until shimmering. Fry each breaded chicken breast for about 3-4 minutes per side until golden brown.
  6. Place fried chicken in a baking dish. Top generously with marinara sauce and mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes until cooked through and cheese is bubbly.
