- 4 boneless, skinless chicken breasts
- 2 cups fresh basil leaves
- 1/3 cup pine nuts, lightly toasted
- 4 garlic cloves
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper and place them on a parchment-lined baking sheet.
- In a food processor, combine basil, garlic, pine nuts, and Parmesan. Pulse until finely chopped, then gradually add olive oil while blending until smooth.
- Bake chicken for 20-25 minutes or until juices run clear. Spread pesto over warm chicken and return to the oven for an additional 5 minutes.
- Serve with roasted vegetables or pasta and drizzle with extra pesto.
