- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups fresh pineapple chunks
- 1 cup diced red bell pepper
- 1 cup diced yellow bell pepper
- 3 cloves minced garlic
- ¼ cup low-sodium soy sauce
- 2 tbsp honey or brown sugar
- 2 tbsp cornstarch
- 2 green onions, chopped
- 2 tbsp vegetable oil
Instructions
- Prepare your ingredients: Chop chicken into bite-sized pieces and dice bell peppers and pineapple.
- Marinate the chicken: Combine soy sauce, garlic, honey, and cornstarch in a bowl. Add chicken and let it marinate for at least 30 minutes.
- Cook the chicken: Heat oil in a large skillet over medium heat. Add marinated chicken pieces and cook until golden brown (5-7 minutes).
- Add vegetables: Stir in diced bell peppers and pineapple; sauté for an additional 3-4 minutes.
- Create the sauce: Pour any remaining marinade into the skillet; simmer for about 2-3 minutes until thickened.
- Serve: Dish up the chicken pineapple over fluffy rice and garnish with chopped green onions.
