- 2 cups cooked chicken breast, shredded or diced
- 1 cup red grapes, halved
- 1/2 cup mayonnaise (or Greek yogurt)
- 1/4 cup chopped celery
- 1/4 cup chopped pecans (toasted)
- 1/4 cup dried cranberries (optional)
- Salt & pepper to taste
- 1 tbsp lemon juice (freshly squeezed)
Instructions
- Prepare your chicken by shredding or dicing it into bite-sized pieces.
- In a large bowl, combine the chicken with halved grapes and chopped celery.
- In a separate bowl, whisk together mayonnaise (or yogurt), lemon juice, salt, and pepper until smooth.
- Fold the dressing into the chicken mixture until well combined.
- Add in chopped pecans and dried cranberries if desired; mix gently.
- Cover and chill in the refrigerator for at least 30 minutes to enhance flavors.
- Serve chilled on plates or in lettuce cups.
