- 1 lb chicken sausage (your choice of flavor)
- 1 cup orzo pasta
- 3 cloves garlic, minced
- 1 medium onion, diced
- 4 cups low-sodium chicken broth
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 2 tsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onions and garlic; sauté until fragrant.
- Slice chicken sausage and add to the skillet. Cook until browned, about 5-7 minutes.
- Stir in orzo and chicken broth; bring to a boil, then reduce heat to simmer for 10-12 minutes until orzo is al dente.
- Fold in spinach, season with salt and pepper, and cook until wilted.
- Remove from heat and sprinkle with Parmesan cheese before serving.
