- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 (14.5 oz) cans diced tomatoes
- 4 cups low-sodium chicken broth
- 2 cups tortilla chips
- 2 tsp cumin
- 2 tsp chili powder
- ½ cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Sauté the onion and garlic in a splash of oil over medium heat until fragrant (about 5 minutes).
- Add the chicken breasts, cumin, and chili powder; stir for about 3 minutes.
- Pour in the diced tomatoes and chicken broth; bring to a gentle simmer for 20–25 minutes.
- Remove chicken, shred it using two forks, then return it to the pot.
- Stir in lime juice and cilantro; serve topped with tortilla chips.
