- 3 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 1 cup diced bell peppers (mixed colors)
- 1 cup chopped lettuce
- 4 large tortillas (flour or corn)
- ½ cup ranch dressing or spicy mayo
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Preheat a grill or skillet over medium-high heat. Season chicken breasts with salt, pepper, garlic powder, and paprika. Cook for about 6-7 minutes per side until golden brown and cooked through.
- While the chicken cooks, chop bell peppers and lettuce into bite-sized pieces.
- Heat tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Lay a tortilla flat, slice cooked chicken into strips, and place in the center. Top with chopped veggies and drizzle with your favorite sauce.
- Fold in the sides of the tortilla, then roll tightly from one end to the other.
