- 1 (15 oz) can of organic chickpeas, rinsed and drained
- 2 celery stalks, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp Dijon mustard
- 2 tbsp fresh parsley or dill, chopped
- 4 slices whole wheat bread
- Salt and pepper to taste
Instructions
- In a large bowl, mash the chickpeas gently with a fork until chunky.
- Mix in the diced celery, chopped red onion, lemon juice, and Dijon mustard until well combined.
- Add in the chopped herbs and season with salt and pepper; mix until evenly coated.
- Generously fill two slices of whole wheat bread with the chickpea mixture and top with the remaining bread slices.
- Cut diagonally and serve immediately or refrigerate for later enjoyment.
