  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley or dill, chopped
  • 4 slices whole wheat bread
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mash the chickpeas gently with a fork until chunky.
  2. Mix in the diced celery, chopped red onion, lemon juice, and Dijon mustard until well combined.
  3. Add in the chopped herbs and season with salt and pepper; mix until evenly coated.
