- 4 oz high-quality dark chocolate (70% cocoa)
- ½ cup unsalted butter
- ⅓ cup granulated sugar
- 2 large eggs
- 2 tbsp all-purpose flour
- 4 tbsp cherry preserves
Instructions
- 1. Preheat your oven to 425°F (220°C). Grease four ramekins and dust with flour.
- 2. In a heatproof bowl over simmering water, melt the dark chocolate and butter until smooth.
- 3. In another bowl, whisk sugar and eggs until pale and fluffy.
- 4. Gently fold the melted chocolate mixture into the egg mixture until combined.
- 5. Sift in flour and fold gently until just mixed; it's okay if some lumps remain.
- 6. Divide half the batter among ramekins, add one tablespoon of cherry preserves to each, then top with remaining batter.
- 7. Bake for 12-14 minutes until edges are set but centers are soft. Let sit for one minute before inverting onto plates.
