- 1/2 cup Greek yogurt
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon chili powder
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled Cotija cheese (or feta)
- 1/4 cup finely chopped red onion
- Salt and pepper to taste
Instructions
- If using fresh corn, grill or boil until tender (5-7 minutes). For frozen corn, thaw and drain well.
- In a large bowl, mix mayonnaise, Greek yogurt, and lime juice until smooth.
- Stir in chili powder, cilantro, and red onion until combined.
- Fold in the cooked corn until evenly coated.
- Transfer to a serving bowl and top with crumbled cheese. Drizzle with extra lime juice if desired.
