- 1 cup unsweetened coconut flakes
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Prep the shrimp by thawing if frozen and patting dry.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mix of panko breadcrumbs and coconut flakes.
- Dredge each shrimp in flour, dip in egg wash, then coat with the coconut mixture.
- Heat about 1 inch of oil in a deep skillet over medium-high heat until shimmering.
- Fry the shrimp in batches for 2-3 minutes on each side until golden brown.
- Drain on paper towels and serve immediately with dipping sauce.
