- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter (melted)
- ¼ cup granulated sugar
- 16 oz softened cream cheese
- 3 large eggs (room temperature)
- ½ cup sour cream
- 2 tbsp instant coffee granules
- ½ cup caramel sauce
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press into a greased baking dish to form the crust.
- Bake the crust for 10 minutes and let cool slightly.
- In a mixing bowl, beat cream cheese until smooth. Add eggs one at a time, mixing on low speed. Stir in sour cream, coffee granules, vanilla extract, and remaining sugar until creamy.
- Pour filling over the crust, drizzle with caramel sauce, and swirl gently with a knife.
- Bake for 30-35 minutes until edges are set but center jiggles slightly. Cool on a wire rack and refrigerate for at least 4 hours before serving.
