- 1 pie crust (store-bought or homemade)
- 2 cups large-curd cottage cheese
- 4 large eggs
- 2 cups fresh spinach, chopped
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp fresh dill or parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- If using store-bought pie crust, place it in a pie dish. For homemade crust, roll the dough to about 1/8 inch thick and press into the dish.
- In a bowl, whisk together cottage cheese, eggs, salt, pepper, and herbs until just blended.
- Fold in chopped spinach and shredded cheeses gently.
- Pour the filling into the prepared crust and smooth the top.
- Bake for 35-40 minutes until golden brown on top and set in the middle.
- Allow to cool slightly before slicing and serving.
