- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 12 oz fettuccine or preferred pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups fresh spinach (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the Pasta: In a large pot of salted boiling water, cook the pasta until al dente according to package instructions. Drain and set aside.
- Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Add seasoned chicken breasts and cook for 6-7 minutes until golden brown and cooked through. Remove from skillet and let rest.
- Add Garlic: Lower heat slightly, add minced garlic to the skillet, and sauté for about 1 minute until fragrant.
- Create the Sauce: Pour in heavy cream and scrape any brown bits from the pan. Stir in Parmesan cheese until melted and smooth.
- Combine: Slice rested chicken and return it to the skillet along with cooked pasta and spinach (if using). Toss everything together for about 1 minute until heated through.
- Serve: Plate the pasta, garnishing with extra Parmesan or herbs as desired.
