- 1 lb Italian sausage (mild or spicy)
 - 1 medium yellow onion, finely chopped
 - 2 medium carrots, diced
 - 2 stalks celery, diced
 - 3 cloves garlic, minced
 - 4 cups low-sodium chicken broth
 - 1 cup heavy cream (or half-and-half)
 - 2 cups fresh spinach or kale
 - 1/2 cup grated Parmesan cheese
 - 2 tsp Italian seasoning
 - Salt and black pepper to taste
 
Instructions
- In a large pot over medium heat, drizzle olive oil and sauté onions, carrots, celery, and garlic until the onions are translucent (5-7 minutes).
 - Push veggies aside and add crumbled sausage; cook until browned (8-10 minutes).
 - Stir in chicken broth and seasonings; bring to a gentle boil.
 - Reduce heat to low and simmer for 15-20 minutes.
 - Slowly stir in heavy cream and greens until wilted (3-4 minutes).
 - Serve hot with a sprinkle of Parmesan cheese on top.
